In this blog post, I cover Kebabs & Kurries, the exclusive Indian restaurant at WelcomHotel Dwarka.
What's the first thing that comes to your mind when you think of Korma, Qaliyan, Salan, or Dopiaza? If you answered Awadhi cuisine, chances are your taste buds are greatly influenced by spices and recipes dating back to an ancient cooking technique.
The sumptuous fare at Kebabs & Kurries - supervised under the watchful eyes of Executive Chef Naresh Dubey and Chef Yashpal - comprises a mouth-watering array of kebabs and curried dishes, paired with soft Indian breads and an impressive library of wines and beverages.
Begin your gastronomical journey at Kebabs & Kurries with a refreshing welcome drink, followed by delicious appetizers curated just for you. For the uninitiated, most of the Awadhi cooking is either done in a tandoor, tava, or angeethi.
Dum Ke Bhooley
Paneer rolls filled with seasoned fresh vegetables tossed with black cumin, dipped in a creamy saffron batter and seared on a griddle.
Murg Angaar
Boneless leg of chicken marinated with ginger, garlic, chopped onions, and red chili flakes. Grilled till done in the tandoor, served hot with a sprinkling of kebab masala and lemon juice.
Mains
Choose between a plethora of vegetarian and non-vegetarian curry options at Kebabs & Kurries.
Dal Bukhara
A harmonious blend of black lentils, tomatoes, ginger, and garlic, simmered overnight on slow charcoal fire, finished with cream and served with a dollop of unsalted butter.
Sabz Abeer
Coarsely chopped spinach with dill and spring onions tossed with tomatoes and cottage cheese, flavored with fenugreek.
Subzaar Kofteh
Marbles of vegetables tossed with spring onions, simmered in a brown onion gravy, finished on dum with ginger.
Rarrah Gosht
Prime cuts of lamb ribs and shank cooked with coarsely pounded mince finished with fresh coriander and ginger.
Murgh Handi Korma
Boneless morsels of chicken simmered in a brown onion and yogurt gravy, flavored with Chef's special aromatic spice powder.
Biryani
Still room for more? Go for the Dum Pukht Biryani, which is Basmati rice and lamb simmered with mace, ittar, and kewra. Finished in a sealed handi.
Pair your food with the finest Indian wine like Fratelli Sette or cocktails infused with Indian flavors like paan and imli. You can also choose some limited edition whiskeys like Big Peat.
The lavish spread of Kebabs & Kurries reveals an ancient culinary secret of long-forgotten herbs and exotic flavors to pamper your palate.

Last week I was invited for a superb culinary experience at Kebabs & Kurries, ITC Hotels' award-winning signature fine-dining brand that showcases scrumptious, heritage cuisine from the region of Awadh, finetuned through years of research by celebrated chefs of the ITC Hotels.
